Every Wednesday, a dear friend and I meet to have lunch together to have an intentional and consistent connection. We chat about our lives, the joys and successes, as well as the trials and tribulations. This has come to be one of my favorite times of the week. During the summer months we tended to eat out, have a smoothie or sit in a park, but now that the winter months and briskness have blown in, the coziness of our homes create the comfort we are looking for.
I wanted to host today and what a better item to make than a warm-you-up-to-your-bones soup. I found a Moroccan Chickpea and Potato Soup that, incredibly, I had all but two ingredients already in my fridge and pantry. I paired it with some toasted bread and some Moroccan Orange Spice tea. It soothed our need for warmth, in more than one way.
