As autumn slowly creeps into our lives, we have choices on how we are going to respond. Do we want to give in to all the cakes, cookies, and comfort food that makes feel lethargic 20 minutes after eating? Or do you want your digestive system to LOVE you and keep you feeling energized and vibrant? I choose the latter which is why I've been making a batch of kitchari almost every week since the beginning of September. Kitchari is an Indian comfort food dish that is easy to digest, heals digestive ailments, and provides a great way to get back on track. I use this dish to come off of each of my seasonal cleanses. I can't get enough of it. My body feels energized. My digestion has never felt more stable. I eat it for breakfast, lunch and dinner, sometimes even 2-3 times per day. I even had the chance to nourish a dear friend by making her a batch of this goodness. T'is the season of Kitchari!
Since I've been making and posting about this Indian stew, I've had multiple requests on what my favorite way to make it is. This is not the traditional way, it is the way that works easily for me and only takes about 30 minutes from start to finish. Enjoy!
Pitta: Cumin Seed, Cardamom, Fennel Seed
Kapha: Cumin Seed, Fresh Ginger, Mustard Seed, Asafoetida (Hing)
Winter: turnips, kale, leeks
Spring: carrots, spinach, and asparagus
Summer: broccoli, zucchini, green beans
A couple of suggestions: Use ingredients that you enjoy! If you're using vegetables that you don't like, chances are you won't enjoy your meal. Secondly, I top my kitchari off with avocado slices and Liquid Aminos for some added flavor. I'm not sure that strict Ayurveda practitioners would suggest the same, but I love the flavor it adds. :)
