I love working from home, for many reasons, but the one that I've been feeling lately is that I can throw a healthy, delicious lunch together in less than 10 minutes. All that I need is a kitchen stocked with the essentials. For me these essentials include kale (of any variety), quinoa, gluten-free tamari, and olive oil. Everything else is an upgrade!
Yesterday, this is what I pulled together for my nutritious and delicious lunch. You'll need a bowl big enough to toss all the ingredients around and distribute the flavors with a fork...and your fingers!
As you can tell, I don't take specific measurements when I'm making a salad as such for myself. That's probably what I like most about the "eating lunch at home" process, it's not perfect...but it tastes amazing and I feel great!
