My new favorite thing is vegan baking, and not only because you don't have to worry about salmonella when you eat the batter, but also because THESE cookies are vegan and gluten-free! I think I'm in heaven!
Next time I'll be adding in cream of tartar and rolling the batter into cinnamon and sugar for my own variation of Snickerdoodles.
Coconut Cashew Cookies Recipe
As adapted from The Whole Life Nutrition Cookbook.
1/3 cup softened virgin coconut oil
1/4 cup maple syrup or agave nectar
2 tablespoons whole cane sugar
1/4 teaspoon sea salt
2 teaspoons vanilla
1 cup brown rice flour
1/4 cup garbonzo bean flour
1/2 to 1 cup shredded organic coconut
1/2 cup raw cashews, ground
1 teaspoon baking powder
1 teaspoon xanthan gum
